We were able to get most of our corn picked before the storm blew it all down! The residents helped to shuck and clean it, and shared stories of their own days of gardening. I have added one of our favorite corn recipes.

Corn Casserole

10 cups of fresh corn cut from cob

3 eggs

1 1/2 cup sour cream

1/2 cup melted butter

1/2 cup heavy cream

2 jalapeno peppers with seeds removed

1 large onion

10 slices of bacon cooked and crumbled

1 box of Krusteaz corn muffin mix

In your food processor puree 4 cups of corn along with the peppers and onion, pour the puree into a large mixing bowl. Add the other ingredients including the the 6 cups of corn and stir until will mixed. Add salt and pepper (optional). Pour into a well greased hotel pan and bake at 400 degrees for 1 hour. This recipe serves 45. You will want to adjust it to fit your needs
